  • Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil. Once hot, add the ground beef to the skillet and cook, breaking it into smaller chunks with a wooden spoon or spatula, until thoroughly browned and no pink remains. This step develops deep flavor. Depending on the fat content of your ground beef (e.g., 80/20), you may choose to drain off some of the rendered fat if desired, reserving a small amount in the skillet.

  • While the beef is browning, prepare your main chili pot. Add the undrained kidney beans, diced tomatoes, and tomato sauce to a large pot (a 6-7 qt Dutch oven works wonderfully) and place over medium heat. Once the ground beef is browned, transfer it to the pot with the beans and tomatoes. Leave a small amount of the rendered grease in the skillet for the next step.
    2 cans (16 oz each) dark red kidney beans (not drained), 2 cans (16 oz each) diced tomatoes, 1 can (16oz) tomato sauce
  • Return the skillet to medium-high heat. Add the chopped onions to the skillet and sautĂ©, stirring occasionally, until they become soft and translucent, which typically takes about 5-7 minutes. Then, add the minced garlic to the skillet with the onions. Stir and cook for just another 1-2 minutes until fragrant. Be careful not to burn the garlic. Transfer the sautĂ©ed onions and garlic to your chili pot and stir to combine thoroughly with the other ingredients.

  • Add all the remaining ingredients—chili powder, fresh ground pepper, sugar, red wine vinegar, Tabasco, Italian seasoning, cumin, sage, and salt—to the pot of chili. Stir everything well to ensure even distribution. Bring the chili to a boil, then immediately reduce the heat to low and allow it to simmer, uncovered, for 45-60 minutes. Stir occasionally to prevent sticking and allow the flavors to deepen. Once done, taste the chili and adjust for seasoning, adding more salt or chili powder if desired, up to 1 teaspoon of additional salt if needed.

  • Serve your delicious chili hot, garnished generously with your favorite toppings such as sour cream, fresh green onions, grated cheddar cheese, diced red onions, fresh cilantro, or sliced jalapeños. It’s fantastic served with a side of warm cornbread or crusty garlic bread!
